After catching the fish, the guide will also process a grilled fish for each guest on site, allowing you to taste the freshest fish, and then release the extra fish back to the snow lake. I just got back from the ice fishing tour in Fairbanks, and it was unreal! The guide was so knowledgeable and patient, and I even caught a nice-sized pike. The grilled fish we had on site was one of the best meals I've ever had. Seriously, if you're thinking about this as a gift, do it!
