Just got back from the mangrove tunnels tour, what an experience!
I just did the Mangrove Tunnels, Dolphins, and Manatee Tour with Fin Expeditions in Cocoa Beach, and I can't recommend it enough! Our guide was super knowledgeable and friendly, and we saw 3 dolphins and a couple of manatees! The small group size made it feel super personal. Just a heads up, bring sunscreen and a towel! It was such a magical experience paddling through those tunnels.
